Go Bananas!

I’ve always enjoyed cooking and baking. Something I think I learned from my Grandma Gussie. I thought part of Stories from the Leopard Lair could include some of the Kitchen Experiences as well.

To start, let’s have some Banana Bread. This was my first time making Banana Bread (that I can recall). We had some bananas turning brown and I did not want them to go to waste. I looked online for a recipe and came up with this one:

Banana Bread

  • 2 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/4 cup butter, softened
  • 2 large eggs
  • 3-4 mashed ripe bananas
  • 1/3 cup plain low-fat yogurt (I used a yoplait strawberry yogurt because that’s all I had!)
  • 1 teaspoon vanilla extract
  • Cooking spray

Preheat oven to 350°

Lightly spoon flour into dry measuring cups; level with a knife. Combine the flour, baking soda, and salt, stirring with a whisk.

Place sugar and butter in a large bowl, and beat with a mixer at medium speed until well blended (about 1 minute). Add the eggs, 1 at a time, beating well after each addition. Add banana, yogurt, and vanilla; beat until blended. Add flour mixture; beat at low speed just until moist. Spoon batter into an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray. Bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan. Cool completely on wire rack.

The above instructions were from the recipe I found from myrecipes.com.

However, I made a few alterations to the recipe:

  • As noted above, I used one of the yoplait strawberry yogurts because that is all I had on hand in the fridge. I wasn’t about to go to the store, nor send Mike, just to get plain yogurt.
  • I don’t have a loaf pan, so I used my 9×9 pyrex.
  • After coating the pyrex with cooking spray, I sprinkled some cinnamon and brown sugar along the bottom and sides of the pan.
  • One review said they had added some chocolate chips to the batter once in the pan and gently stirred them in. I thought that was a great idea…but I was out of chocolate chips. Not worth a trip to the store. How did I make it happen? Ummm….I found a chocolate bunny in the candy dish. Chopped him up with a knife and swirled in the crumbles.

This was delicious! And it is now in my recipe book for safe keeping. It will be perfect for the upcoming cool weather with a cup of coffee. The few alterations made this popular recipe my own creation…and that…I LOVE!
